Anjie's Coconut Macaroons........... love / hate relationship

12 oz of flaked coconut,   I use sweetened (generic / store brand is fine if you don't have a coupon or there is no sale)
1/2 cup all purpose flour
pinch of sea salt
1/2 can of sweetened condensed milk
1/2 cup canned cream of coconut or coconut milk * I have used both successfully
1 cap full of almond extract (I use high quality)
1 cap full of vanilla extract (I use high quality)
1 large egg or egg substitute

HINT :  save $10 on ANY PURCHASE here and use towards some of these ingredients if you don't have them already they have all of them here.... ^^^^

  • heat oven to 350
  • in small pan put a hand full of coconut and toast lightly , stir and toast again until "golden" brown
  • mix toasted coconut with remaining cocunut, flour and salt
  • in separate bowl mix all other ingredients well
  • pour the ingredients together and mix until wet
  •  spoon drop on to parchment paper or non stick pan
  • bake about 10-14 minutes depending on your oven (until golden on top)
  • cool on wire rack
HINT:   wash pan immediately it will be sticky
HINT:   eat at least one warm........... :)

FYI: For those of you gluten free folks, try substituting cornstarch for the flour....don't need as much and they come out just the same
