Coconut Zuchinni Muffins

GO HERE for the "base" recipe
my "alterations" included  I replaced 1/3 cup of the flour with Coconut Flour
additional  "coconut oil"  (add 1/3 cup to the recipe)
I added 2/3 cup of shredded coconut to the recipe
I only used 1 cup of Shredded Zuchinni
I made 24 mini muffins and 12 large muffins
I frosted the large muffins with Cream Cheese Frosting
I cooked until golden brown, they are not as "moist" as the reviews on the page, rather they have a drier consistency and are VERY VERY tasty!  :)
